Mumbai (Maharashtra) [India], September 17, 2026: Maharashtra’s recent food safety enforcement drive has sent a clear message to restaurant owners:
Compliance is not something to think about after an inspection.
Between May 25 and July 31, 2026, the Maharashtra Food and Drug Administration (FDA) inspected 890 hotels, restaurants and eateries. Of these, 116 licences were suspended, roughly 1 in 8 establishments inspected. Across 3,137 food establishments inspected during the period, 165 licences were suspended, 764 improvement notices were issued, and food worth ₹55.72 crore was seized or destroyed.
For restaurant owners, the question is simple:
If an inspection happens tomorrow, is your paperwork ready?
It’s not just about the kitchen
Running a restaurant means managing much more than food and customers.
You also have contracts, vendor agreements, employee documents, policies, licences, notices and other legal and compliance paperwork to keep in order.
And these things are easy to put off.
Until a document is suddenly needed.
Until a licence needs attention.
Until an agreement needs to be signed.
Or until an inspection brings a missing document to light.
That is when a small gap can become a serious business problem.
What should restaurant owners have in place?
A restaurant’s legal and compliance checklist can include:
- FSSAI licence and related documentation
- Vendor and business agreements
- Employment documentation
- Policies and SOPs
- Legal and compliance records
- Pest-control and water-testing records
- Staff medical records
- Cleaning and maintenance records
- Storage and temperature records
The exact requirements depend on the business and applicable regulations.
But the principle is straightforward:
Don’t wait for an inspection to find out what you are missing.
